Clean Zucchini Boats

Zucchini boatsIngredients:

  • 3 large zucchini

  • ½ lb extra lean ground beef hormone and antibiotic free if possible

  • 1/2 tsp. minced garlic

  • pure coconut  oil

  • 1/4 c. chopped onion

  • 1/4 c. chopped green pepper

  • 1/4 c. chopped red pepper

  • 1/4-1/2 cup mozzarella cheese (optional)

  • 1/4 cup parmesan cheese (optional)

  • Himalayan salt (to taste)

  • pepper (to taste)


  1. Preheat your oven to 350 degrees.

  2. Slice your zucchini in half lengthwise and scoop out the insides to create a shell. Save the insides!

  3. Place your zucchini on a baking sheet with the skins down and spray with coconut oil and sprinkle with pepper

  4. Bake the zucchini for 20 minutes

  5. While the zucchini is baking brown the ground beef in a skillet

  6. While the beef is cooking chop your veggies including the insides of the zucchini

  7. Once the beef is fully cooked add in the red & green peppers, onions,  garlic, and extra zucchini

  8. Cover the skillet and cook the mixture, stirring occasionally, until the vegetables have cooked thoroughly

  9. Lastly if you aren’t making the Paleo version, add in the parmesan cheese to your meat and vegetable mixture and combine

  10. After 20 minutes remove the zucchini from the oven and place the mixture in the two halves

  11. Top each side with mozzarella cheese if desired and bake for 20 minutes longer (Highly recommended, it’s the icing on the cake so to speak!)
