Spicy Meatloaf

Tired of all the traditional meatloaf recipes that are all over the internet? I like meatloaf but it always seems to be lacking. It’s time I created some SPICY MEATLOAF with a kick!

When my husband requested it for dinner tonight I knew just what I would do with it and I was excited to test my spicy meatloaf idea and see if it turned out good enough to share. To my delight he LOVED it and I think you will too!

I wish I had taken more pictures but I got sidetracked and a little nervous when he invited guests for dinner to try my new recipe too. 🙂 Just FYI, they thoroughly enjoyed it too and my only regret was that I didn’t make more. This recipe provides 4 healthy serving sizes with no leftovers. Double the recipe if you need more. 😉 I’m personally getting used to cooking for two since our kids have flown the coop.

Spicy meatloaf ingredients

Preheat oven to 350 degrees.

15 minutes to prepare and approx. 75 minutes to bake.

Meatloaf Ingredients

1 lb lean ground beef

1/2 c. finely chopped onion

1 slice toasted then crumbled whole grain bread

2 large eggs

2 tbsp Bragg’s Amino Acids

1 tbsp Sriracha Hot Chili Sauce

Mix together in mixing bowl with both hands until well blended the pat into a loaf. Place in a baking dish and cover with lid. Bake for 1 hour and 15 minutes @ 350 degrees. Take meatloaf out after 1 hour (slice in the center to make sure it’s cooked thoroughly), add topping then put back in the oven for additional 15 minutes.
